Citric Acid is in our everyday foods for several reasons, one reason is because it is a great natural preservative. For example, guacamole goes brown pretty fast. One way to keep it from going brown is to add lemon juice or lime juice to it. It is also a great taste enhancer. If you ever eat fish tacos, you will know exactly what I mean. Squeezing a bit of lime on your taco can bring out the flavor, and make it taste even better. This goes for many foods, a tad bit of citric acid can be a great compliment to the taste of food.

What Properties Does Citric Acid Have?
Well, the most obvious properties that I already listed above, is that it is an acid and is very sour. It can also be a salt in the form of a citrate ion. The salt that is used in the preservation of foods is called Calcium Citrate. Citric Acid at room temperature is in the form of a white crystalline powder. Citric Acid is destroyed by the loss of Carbon Dioxide as well as water when it is heated to a temperature over 175 degrees Celsius.

Pros and Cons of Citric acid
The pros to using citric acid are it is a preservative, what that means is if you squeeze a lemon over say an avocado it won't brown due to the way the citric acid is affected by the air. Another pro to using citric acid is it helps breakdown kidney stones. The cons to using citric acid is it wears away your tooth enamel which protects your teeth so after a while your teeth will form cavities and basically rot. The link below will show you what can happen if you don't brush and drink too much stuff with citric acid in it.
